Swamp Soup is a flavorful combination of sausage, greens (like spinach or kale), beans, and a savory broth. The “swamp” name comes from the look of the greens in the broth, but don’t let that fool you—it’s delicious! This soup is super flexible, so you can customize it to your liking. Whether you prefer spicy sausage or mild, kale or spinach, this recipe can easily be adapted to suit your tastes.

Ingredients You’ll Need
- 2 cans of Margaret Holmes seasoned turnip greens (the big cans)
- 1 can of mild rotel (regular size can)
- 1 can of Margaret Holmes seasoned tomatoes & okra (regular size can)
- 1 can Bush’s great northern beans or navy beans
- 1 can of Margaret Holmes seasoned black eyed peas
- 2-3 lbs small potatoes
- 2 lbs of original Conecuh sausage
Step-by-Step Instructions
- Step 1: Brown the Sausage
Start by cutting up the sausage and browning it in a skillet over medium heat. Stir it occasionally so that all the pieces cook and brown evenly. Once cooked, remove the sausage and strain the grease if necessary. - Step 2: Add Broth, Beans, and Tomatoes
Now, it’s time to add some liquid goodness! Pour in your chicken or vegetable broth (optional) into a stock pot or any large pot, followed by all of the undrained cans listed in the ingredients list (the liquid adds flavor and thickens the soup). Stir everything together and bring it to a gentle simmer. - Step 3: Add the Sausage
Once the soup is simmering, toss in the sausage. - Step 4: Cut up the Potatoes
Wash and cut up the potatoes and add them to your pot. - Step 5: Simmer & Serve
